Solera Top-Ups plus NHC Gold Medal

I had already scheduled this post about my most recent round of solera top-ups, but now it seems especially appropriate since a pale sour I blended from them won a gold medal in the sour category at NHC.  That beer had already done well in several competitions, taking a gold in MCAB and the first round of Nationals, along with a silver in the Drunk Monk Challenge.  I was pleased about the MCAB medal, but a gold at NHC is even more exciting.  I've given bottles to other home-brewers, and they all seem to have enjoyed them (and gave me helpful feedback).

I think the beer's success stands as a proof of the original concept behind my six-gallon soleras: my idea when I started them was to have a range of beers with differing flavour-profiles available for blending.  The scoresheets I've received so far have all commented on its aromatic complexity, which I attribute to the fact that its a blend.  Blending also gave me greater control over the overall acidity.  It wasn't exactly my intention, but I think part of the reason this beer has done so well is that there is still a slight perception of sweetness balancing its tartness.  I was relying on ongoing fermentation of some of the residual sugars for carbonation, and they haven't been completely fermented out yet.  This slight sweetness fills out the palate of the beer, accentuating its citrusy flavours, and it will hopefully give the beer some longevity as those sugars are gradually fermented.  You can read about each of those soleras in the links here, and about the particular components and ratios I used in the winning beer here.



That blend is quite bright and fruit-forward, with lots of citrus and pineapple, and only a light barnyard funk.  Its also rather pale, and doesn't have any of the residual earthy bitterness that I sometimes pick up on in certain gueuzes.   For this most recent round of top-ups, I decided I wanted to see if I could steer some of the soleras towards a more classical lambic profile, and to this end I changed a few key parts of the process.

As of writing this, I've only brewed top-ups for the Roeselare and ECY20 pale soleras, and I'm thinking about just leaving the Melange one as it is until after the summer.  This is mainly due to time constraints and other beers I have planned.  I varied the recipe and process for both pale soleras this time.  First of all, I switched to a simpler recipe of 65% pilsner and 35% unmalted wheat.  The wheat was very hard and more difficult to mill than either spelt or buckwheat.  I didn't do a full turbid mash, but instead used the Wyeast Lambic Mash Schedule described on p.142 of Wild Brews.  Unless I'm missing something, this is just a cereal-mash for the wheat followed by a regular mash held at higher temperatures.  I don't know how effective this will be in leaving starches in the wort, but we'll see.

The next variation was in the length of the boil.  I've been experimenting with this in a few beers recently, and have noticed a quite dramatic change in colour from extending to three hours or longer.  You can see samples from the beginning and end of each boil in the photos below.  Just to avoid any confusion: when I lengthen the boil in this way, I also liquor down so that I am starting with a larger volume of wort in the kettle at the start of the boil, and end up with the same amount of wort as I would from a regular boil.  That means that the darker colour is not just a result of a more concentrated wort.  You'll have to take my word for this, but the same amount of malt with my regular starting volumes and boil length would produce a much lighter post-boil sample.



I also increased the amount of aged hops in these batches, using 50g in one and 80g in another.  The hops were pellets purchased as 'Lambic Hops' from Farmhouse Brewing Supply, and allowed to age further in a brown paper bag in my closet.  I was a little concerned that they would add too much bitterness, as I've had that problem with other supposedly 'aged' hops that I've bought in the past.  However, although there was definitely some earthy bitterness in both beers post-primary, neither seemed overly astringent or harsh.

Primary fermentation was done by Wyeast 1318, a strain I've used fairly frequently in the past.  I also added the dregs of a bottle of gueuze for the primary as well, hoping that this will give anything alive in the bottle time to get established before each batch was added to the solera.  After primary was complete, I racked out three gallons from each solera, storing the Roeselare in a three gallon carboy (until I used it in this blend), and the ECY20 in a mix of gallon and half-gallon jugs.  I then topped each up with the three gallons of newly fermented beer.

I am planning to check on these in mid to late Autumn.  Perhaps the solera will speed along the development and fermentation of the whole, in which case I may try some blending again at that point, using anything left over from this pull as an additional component.  If they're not quite ready yet, I'll still brew a top-up, and just rack off three gallons of each into another carboy so that it can continue to mature separately.

For the red solera, I knew that I wanted to pull off four gallons: three to mature in a separate carboy for future blending, and one for a bière de coupage made with tart cherries.  I also switched recipes for this batch too, using a version of the RU55 recipe posted by Jester King.  I thought the colour was quite lovely.  in fact, I liked it so much 'veI decided to make a second batch to age independently of the solera.

Once again, I used Wyeast 1318 for primary fermentation (I think it works particular well in these beers), and will add dregs from a few home-brews and commercial beers to the smaller batch over the course of the first week of fermentation.  The larger batch will be added to the solera 'clean'.

I'm planning to blend something with these late in the year. I still haven't made an unfruited Flanders-style beer that I've been really happy with, so a lot of what I pull might end up on fruit.  The rest will be blended with either older pulls from the solera, or pulls from the separate, stronger, brown solera.

Tasting Notes: Second Extraction Beers

Last summer I bought a lot of fruit at my local Farmer's Market.  Some of it went into pickles and preserves, but most ended up in sour beers.  The results were excellent, with some of the beers going on to take first place their categories in local competitions, so I've been looking forward to picking up more this year to use when I make blends from my soleras in the Autumn.  However, as a penny-pinching graduate student I was also very aware of how expensive all that fruit was, and I couldn't help wonder if I might be able to extend its use beyond single beers.  After all, Cantillon use their cherries twice, and Jester King have also tried a similar process for some of their beers.  What's more, by transferring clean beers onto the spent fruit, dregs, and secondary yeast cake of a sour beer I would be essentially repeating my process of cutting young beers with aged sours.

My basic idea, then, was to take clean beers that were already quite dry (mainly saisons) and transfer them onto the spent fruit and dregs from a sour beer.  I was hoping that the mixed culture might add some tartness and complexity to the finished beer, and that at least some of the fruit would come through as well.  Overall this has been pretty successful, especially with fruits that make a quite assertive contribution like Raspberries or Tart Cherries.  I'll certainly be repeating the process with more saisons this year.

Tart Brown Ale w/ Cherries from a Sour Brown

The base was a blend of American 2-Row and Pearl malt. along with some Medium and Dark Crystal for character, Pale Chocolate and Midnight Wheat for colour, and Golden Naked Oats to fill out the body.  I was going for a light tartness with this one, so I first let it ferment with a pitch of Wyeast Ardennes, and then transferred it on top of the spent fruit and yeast cake from a beer I'd brewed with Wyeast Oud Bruin.  I felt like the first beer I made with that blend was fairly one-dimensional and boring, and that's true to some extent of this one as well.  The fruit does come across nicely in the aroma though.





Appearance:  Dark brown with red highlights when I hold it to the light.  Thin but persistent head.

Smell:  Bright cherries prominent on the nose, along with darker fruit like blackberries or currants.  A sort of bready smell behind it, so that the whole makes me think of good quality preserves on toasted wholewheat bread.  Slightly metallic edge as it warms up.

Taste:  Light tartness first, kind of lacking in the mid-palate, and then a lingering taste that reminds me more of red currants than cherries. A bit disappointing after the aroma: a bit flat, I'd like more prominent fruit and more of that toasted bread in the background.

Mouthfeel:  The oats definitely give it a slightly fuller mouthfeel.  In fact, because of the low carbonation, it coats the back of throat in a way I'd describe a 'cloying' if it was sweet.

Drinkability & Notes:  The fruit comes across nicely on the nose, but the beer itself is a bit lacking.  I haven't managed to come up with a low ABV sour brown recipe that I'm happy with yet.  The oats certainly help with the mouthfeel, but there just isn't enough going on with the flavour.  With slightly higher carbonation it would be quite drinkable and refreshing: the tartness is just right.


Tart Saison w/ Cherries and Raspberries from a Flanders Red

The base was blend of Golden Promise and Pearl malts, aiming for a bit more character than plain pilsner.  I added some Golden Naked Oats again for mouthfeel, and around 1.5% Midnight Wheat for colour.  Once the beer had fermented out with Wyeast 3726, I transferred it onto spent fruit and and a small amount of beer left from a Flanders Red, and let it sit for about a month.  The O.G. was 1.044. and I'm sure it dried right out, giving an ABV of about 5.8%.



Appearance:  Reddish-brown colour.  I was going for a more brilliant red.  First pour is crystal clear. Head dissipates entirely after a few seconds.

Smell:  Raspberries and cherries dominant in nose, with some earthiness as well.  Smell of clean lactic sourness.

Taste:  Tart, jammy fruit up front.  Mid-palate is again a bit lacking, but it finishes nicely with a lingering taste of raspberries (fruit and seeds).  Hint of bready malt behind it.  Also fairly sour, to the point where I might struggle to drink more than one or two (my tolerance is low though).

Mouthfeel:  The high carbonation makes it crisp and refeshing.  Perhaps a touch thin, but it doesn't detract from the beer.

Drinkability & Notes:  Tart and refreshing, with the fruit coming through quite clearly.  Its actually a bit more sour than I'd like, but otherwise I'm quite happy with how this one came out.  I'll probably do the same thing again this year, perhaps adding some spelt for body and maybe some Munich and dark candi syrup for a bit more character and depth.


Tart Saison w/ Apricots and White and Yellow Peaches from a Golden Sour

I planned this beer as a pale saison that I would age on spent yellow peaches and apricots from a Golden Sour/pLambic.  The grist was  again a combination of Pearl and Golden Promise, rounded out with a bit of torrified wheat.  I added some El Dorado and Mandarina Bavaria hops to the whirlpool, hoping they'd accentuate the fruit.  Once it had fermented out with Wyeast 3726, I transferred it onto the spent fruit and dregs, but this time I added three pounds of frozen white peaches as well.



Appearance:  Pale yellow colour.  Crystal clear.  Billowing head that dissipates very quickly.

Smell:  Interesting aroma.  Lots of grass and hay.  Strongly evocative of cut grass that's dried out in the sun.  Reminds me of summers when I was a kid.  Peaches are very subtle in the background behind it, emerging a bit as it warms up, but I don't know that I'd pick that description if I didn't know they were there.  Aroma is probably more reminiscent of apples at this point.

Taste:  Tart, and a little juicy.  Peaches come across a bit more here.  Same warm and bready malt emerges in the background.  I quite like the dimension this adds.  Lingering tartness with a slight taste of peaches

Mouthfeel:  Crisp, with fairly high carbonation.  A touch thin though, which makes the sourness a little sharp, although is already softened a little compared to earlier bottles.

Drinkability & Notes: The 'dried cut grass' aroma is very striking, and wasn't there in the earlier bottles.  Peaches are subtle but there if you look for them.  All in all a tart and refreshing beer with a bit of added complexity.  I was hoping for a bit more from the peaches, but they seem to make quite a subtle contribution in all the beers I've made with them.  It'll be interesting to see how this one continues to develop over the next few months.

Spontaneous Fermentation II: Success?

After my failed attempt at spontaneous fermentation in November, I was itching all winter long to have another go once the snow left and the temperatures rose above freezing.  It took a little longer than I anticipated (Chicago winters don't give up without a fight), but at the start of April I finally had another chance to have a try at it.  My process was essentially the same as last time: I let the wort cool by an open window overnight, and then transferred it to a carboy along with an oak spiral that had been sitting in a gallon jug containing my 'house culture'.  There were at least three significant differences that might have affected the outcome this time round: the oak spiral had been sitting in the culture for several months, instead of for a few weeks; the temperatures overnight stayed well above freezing; and I was able to give the wort an extra hour or two to cool, though it was still in the high 70s when I transferred it the next day.

Last time the wort sat for almost ten days without showing any signs of a strong fermentation.  A thin white pellicle formed after a few days, and remained there for the next week, but when I finally took a sample the gravity had barely dropped at all, and the pH was still dangerously high at 4.9.

This time, after only two days, a thin krausen formed on top of the wort.  Within a day or so, this was more than an inch thick, composed largely of small fine bubbles that looked like bubble bath (the second photo is from day five).  The krausen stuck around for a while, dissipating briefly, then flaring up again a few days later.  At this point the aromas coming from the airlock were slightly vegetal and gross, after seeming fairly clean for the first few days.

Eventually, once things had settled down a bit (approximately two and a half weeks after fermentation started), I transferred the wort to a smaller carboy and took some measurements.  The pH was at 3.96, and the gravity at 1.022, so I knew it should be safe to try a sample.  To my surprise, it didn't taste that bad!  Slightly tart, with a predominantly doughy character and some vegetal notes.  Not something I'd enjoy drinking in any great quantity, but also not something I wanted to spit out at once.  I count that as a success.

Transferring the beer to a secondary provoked another round of fermentation, which has continued up till today (a month after I brewed it).  I don't want to take enough wort for another gravity sample, but I did sneak another taste.  The vegetal aroma is still there, and the taste is a strange combination of slight tartness, sweetness, and bitterness from the aged hops.  I expect this to change significantly as it ages, and at this point I'm planning on essentially forgetting about it for the next year (who am I kidding, I'll probably sample again before then, but I'm going to at least try to leave this one alone).

Tasting Notes: Lochristi Peach Sour (Yeast Bay)

I think one of the most important lessons I've learned over the last few years of brewing sour beers is patience.  I'm not talking about patience while the beer is in the fermenter, but rather about patience after the beer is packaged in bottles.  In the past I'd happily wait months and months for a sour to age in secondary, only to expect it to be ready two or three weeks after bottling like any other beer.  I quickly learnt that some sours taste bad after a few weeks in the bottle:  I've experienced diacetyl, tetrahydropyridine, low carbonation, and weird brett phenols that fade after a month or two.  But what I didn't fully appreciate was that even though a beer can taste OK after a few weeks in the bottle---no off-flavours, etc.---it can still take many months to come into its own.

This beer is a case in point.  It tasted fine after a few weeks, even months, in the bottle.  The peaches were subtle but present, there was a nice lactic sourness, and even some fruity esters from the brett, but it all seemed a bit one-dimensional and boring.  Almost like a less sour version of a fruited berliner-weisse: tart, fruity, and refreshing, but not particularly memorable.  But in the last month or so this beer has really come into its own.  The change wasn't particularly radical: its not that I can point to distinctive new flavours or aromas.  Instead, it's just melded together and softened so that where before it was angular and assertive, now its elegant and subtle.  Of course, now I only have one or two bottles left!

You can find details of the original beer in the post linked to above.  It was inoculated with The Yeast Bay's Lochristi blend, and aged on some peaches from a local farmer's market.  The peaches were never particularly assertive in the beer, and now they blend seamlessly with the other flavours.  (I'm not sure anyone would say that this is a Peach Beer, but they might pick peach as a flavour descriptor.)  The profile from the Lochristi blend is very similar to other beers I brewed with it, but it works particularly well here, rounding the beer out with a soft fruitiness that complements the peaches nicely.

Appearance: Rich yellow colour.  Head dissipates quickly.

Smell: Peach skins and overripe fruit.  Melon.  Green strawberries?  Yogurt-like tang underneath it.

Taste: Peaches and sweet melon.  Soft acidity.  Slightly doughy malt.  Very enjoyable.

Mouthfeel: Soft and well-balanced.  When this beer was younger and more one-dimensional I wanted more carbonation, but now I like the lowish-level because it adds to the soft fruitiness.

Drinkability & Notes:  I love where this beer has ended up.  Its one of my favourite sours in fact, although I suppose its barely more than tart.  I think it works so well because the beer is quite delicate and subtle: a more assertive brettanomyces blend, or more prominent fruit, would turn this into a completely different beer.

First Pull: Roeselare Pale Solera

Just a quick update post today.  Over the past few months I've been slowly increasing the number of six gallon soleras I have on the go, the idea being to eventually have a range of different beers on hand for coupage and blending.  To keep track of things I've decided to name each pale solera after the bug blend it was fermented with.  I currently have three in my closet---Roeselare, ECY01, ECY20---and I'm thinking of adding a fourth with The Yeast Bay's Mélange blend some time in the next month or so.  At the moment each has a slightly different base recipe, but I might start using the same base for each in future.

Last week I took the first 3 gallon pull from my Roeselare Pale Solera, and topped it up again with some freshly fermented beer.  The original solera was a mix of a Flanders Pale Ale fermented with Roeselare blend on October 11th 2013, to which I added another pale beer fermented with Wyeast 3522 on June 24th 2014.  That made the average age of the beer I pulled about 11 months.  The top-up beer I added last week was a slightly lower gravity version of the original recipe, fermented with Wyeast 1318 instead of a Belgian strain.  It had a gravity of about 1.012 when I added it to the carboy.

The beer I pulled still had a fairly high gravity of around 1.006, and was only moderately sour, with a pH of 3.96.  It had a very nice mix of citrus and stone fruit flavours, with only a little funk in the background.  I added a little over a gallon to a four gallon version of this buckwheat saison (recipe was slightly different because I ran out buckwheat), and I'm planning on letting them ferment together for another month or two before adding dry hops and packaging in bottles.  The base saison already has a nice fruitiness which I think will be complemented by the flavours from the aged beer.  Its also already fairly tart, so I'm glad that the solera beer isn't too sour yet.

I also transferred another 2 gallons into smaller jugs for extended ageing, flushing each with CO2 before transfer to minimise oxygen pick up (since I don't have kegs, I use a handheld CO2 charger).  The plan is to use some for cutting other saisons in the next few months, and to draw on the rest as a component in blended beers when I start pulling from the other soleras later this year.  I'll be brewing a 3 gallon top up for my Flanders Red solera in the next few weeks, and allowing the beer I pull from it to age further in a smaller carboy.  Hopefully I should be able to start creating blends from them all at the start of the Autumn this year.

Failure: Spontaneous Fermentation

A little over a month ago I tried my first foray into brewing a spontaneously fermented beer.  I decided at the start that along as it started fermenting within a week or two, I'd let the beer age out no matter how bad it tasted at first.  Sadly the beer failed to cross even this low hurdle!

I started to write up a post about my process anyway, and in doing it I found myself thinking about why a home brewer would be interested in fully spontaneous beers at all.  In the end I wound up with a rather long and rather rambling discussion of that topic.  I've decided to post the whole thing, in case it was helpful or of interest to other homebrewers: the first half discusses my process, and the second half contains some general layman's thoughts on spontaneous fermentation.

Process

First, the background stuff that is largely irrelevant now that the beer's been ditched. The grist was a blend of wheat malt and pilsner, with about 100g of flaked oats steeped in the wort after mashout to add some starch (in place of a more traditional turbid mash).  I boiled for only ninety minutes, using aged pellet hops at a rate of 4-5 grams per litre.

After flameout, I transferred the kettle to a spot adjacent to an open window and wrapped it up in the insulation I use while mashing (a cut-up exercise mat and a sleeping bag).  Here I was trying to follow advice that Cantillon's Jean van Roy gave to homebrewers in this interview with Basic Brewing Radio (direct link to audio).  He mentions the cooling rate of the wort as a potentially significant difference between beers brewed at Cantillon and beers brewed on a smaller scale: their larger volume of wort takes considerably longer to cool, and this might determine the kind of organisms that are dominant in the wort over the following days.  As evidence of this he mentions a beer brewed on a smaller scale at a local commune that didn't turn out so well---so anecdotal evidence at best, but I thought it was still worth implementing.

After wrapping the kettle in the sleeping bag I removed the lid and covered the opening with a thin mesh bag, then left the kettle by the open window to cool overnight.  The forecast was for temperatures just above freezing, but there had been some colder nights in the preceding week.  Next morning the beer was still in the low 80s, significantly warmer than the temperatures mentioned by Jean van Roy (I'd have to listen again, but I think he mentions temperature that are 10-20 degrees lower).  I transferred the beer to a sealed carboy to let it cool further, but in hindsight I wonder if I shouldn't have left it out for a longer inoculation.  This is one of the points at which I will change my process if I do this again: perhaps longer exposure at lower temperatures would have encouraged inoculation by wild yeast?

Lambic brewers rely as much on organisms inhabiting their barrels as they do on the spontaneous inoculation during cooling, so to imitate this aspect of their process I soaked an oak spiral in my gallon jug of "house culture" for several weeks before brew day, then added it to the cooled wort hoping that it would introduce further diversity into the fermentation.  This is the second point at which I will change my process if I do this again.  I was essentially relying on the spiral for the main inoculation, and I worry that by only leaving it in the house culture for a few weeks I didn't give the brettanomyces and other organisms enough time to establish themselves in the wood. This might also explain the fact that fermentation didn't start as I'd expected.

After inoculation, I waited patiently for signs of fermentation.  A few days in I saw a thin white pellicle form on top of the wort (blurry photo below), which made me optimistic that things were going to plan.  But then after that nothing happened.  Five, six, seven days past and the wort looked exactly the same: a thin white pellicle on top, but no activity in the airlock and no other signs of fermentation.

Eventually, after almost two weeks, I decided to open the fermenter up and take some measurements.  To my disappointment the beer had only dropped a few gravity points, and its pH was still up at around 4.9.  That was high enough that I didn't want to risk tasting it, so I transferred the wort to a smaller carboy to see if the oxygen pick-up helped start a fermentation.  But everything seemed the same the next day, and I decided to give it up.  It wasn't the first beer I've poured down the drain, and it probably won't be the last!

Thoughts on Spontaneous Fermentations

While going through all of this I was thinking a lot about why a homebrewer might be interested in spontaneous fermentation in the first place.  Obviously it has to do with the fact that Belgian lambic brewers use these processes to make such wonderful beers---but can we be more specific about what it is we're trying to imitate, in a way that might help with translating these practices to a smaller scale?  What follows are my own half-baked reflections on why I am interested in spontaneous fermentation, and why I'll probably give it another shot next year.

I'm sure that for a lot of people the allure of spontaneous fermentation comes from the idea of capturing local yeasts and bacteria that might provide a unique range of flavours by the end of fermentation.  I suppose there are two distinct points here: first, the desire for "sense of place", which is often expressed in terms of the notion of "terroir" (there's been a lot of talk about "place-based beer" recently); and second, a desire for the unique range of flavours produced by mixed fermentations.

I'm certainly attracted by the idea of a house character arising from mixed fermentation that would create a distinctive and recognizable flavour profile in my beers; but I don't know that I care if this comes from "local" organisms, bottle dregs, commercial strains, or a mix of all three.  (I guess I'm a little skeptical about the way ideas like "terroir" and "sense of place" are used in marketing beer.  I've been making my way through Authentic Wine in the past few weeks, and one thing that became apparent very early on was how complicated and contested a notion terroir is in the wine world.)

But anyway, if what you want is local organisms there's no need to go through the risk of trying a spontaneously fermented batch; you can try to capture them on a smaller scale in leftover wort, grow them up selectively based on sensory impressions, and pitch as you would a regular yeast.  This is how Jester King cultivated their house culture.  That seems like a much more reliable option than the techniques used by lambic brewers, and its one that's been adapted successfully on a home brew scale.

On the other hand, what if you just want to a mixed fermentation, and don't really care if the organisms are "local"?  The obvious answer is that you can pitch a variety of dregs and cultures at the start of fermentation or as it progresses, but this won't get you anything like the diversity of organisms present in traditional spontaneously fermented lambic (see e.g. this paper).  General consensus seems to be that by the time they are bottled there are only a few organisms active in these beers, and commercial blends are usually limited to a few strains of yeast and LAB.  But why might such diversity be desirable?

This brings me to another reason for imitating the practices of lambic brewers: to encourage a similar fermentation cycle as the one found in their beers.  As lambic ages, different organisms become dominant, fermenting out the remaining sugars and modifying byproducts left by activity earlier in the fermentation.  One thought you might have here is that the sugars and other compounds available at each point play an important role in shaping the flavour profile of the final beer.

Let me give you an example of what I mean, based on my layman's understanding of Wild Brews and the paper I mentioned above about the organisms present in lambic wort. We know that the dominant organisms in the first few days after fermentation are enterobacter.  That might seem to be something undesirable, since these bacteria produce fatty acids and create various unpleasant off-flavours.  In fact, Jeff Sparrow mentions that some lambic brewers have taken steps to prevent this stage of the fermentation (though, based on the paper, that is clearly not true of Cantillon).  However the fatty acids produced by the activity of enterobacter can act as precursors for ester formation by brettanomyces.  In other words, these wild yeasts take an unpleasant compound like butyric acid, which is produced by the enterobacter and smells rancid; and convert it into another compound, ethyl butyrate, which smells like juicy fruit, pineapple, and cognac!  That being the case, some small amount of initial activity by enterobacter might actually be desirable, as it would produce compounds that could be transformed at a later stage in the fermentation.

What about sugars?  Reading through Wild Brews again I was also struck by the claim that the activity of enterobacter in the early days and weeks of fermentation might shape the rest of the cycle, since the enterobacter will consume amino acids in the wort before the saccharomyces get a chance to use them. This will slow down the growth of the yeast and limit their ability to ferment the wort---Sparrow gives O.G.s of 1.022 after 3-4 months, and 1.012 after about 8-12 months. That means that there is lots of fermentable sugar left when Lactic Acid Bacteria become the dominant organisms and take over fermentation. It also means that brettanomyces doesn't become active until relatively late in fermentation, since it grows even slower than saccharomyces, especially in this nutrient poor environment.

So here we have one early stage of fermentation, distinctive of spontaneous beers, that shapes the rest of the cycle by determining the sugars available as each organism becomes dominant and by ensuring there are various compounds present in the beer.  I find the numbers that Sparrow provides quite striking: I don't think I've ever had a beer with an O.G. in between 1.040-50 be as high as 1.022 after three months of secondary fermentation, and I've certainly never had one be as high as 1.012 after a year. What's more, based on what these books say I suspect that the fermentation cycle of a typically inoculated home brew looks pretty different from a traditional lambic; for instance, I'd guess that brettanomyces becomes dominant much earlier in the fermentation, even if its population grows slower than saccharomyces.

Does any of this matter?  I'm not sure. Its certainly true that you can make great sour beer without a spontaneous fermentation.  Its also true that you might be able to achieve some of the same effects by other means.  For instance, Vinnie Cilurzo at Russian River imitates the cycle of lambics by staggering the inoculation of the wort with different organisms (though homebrewers don't seem to have had as much success with this process---perhaps because Vinnie can halt fermentation by filtering the saccharomyces out before he transfers the beer, leaving plenty of fermentables for the LAB and brett).  And perhaps most importantly of all, a fully spontaneous inoculation is a risky affair, especially if you're relying on a single batch rather than the wide range of barrels a real lambic blender can pull from.  There's no guarantee that the brettanomyces will clean up the off-flavours produced by the enterobacter, and there are other risks here too (e.g. the enterobacter will produce acetic acid, which is undesireable in anything other than small amounts and might encourage the formation of an excess of ethyl acetate, making the beer smell like nail polish).

As I finish writing this, my thoughts keep coming back to the long slow fermentation cycle of lambic beers.  One reason that Dave Marliave gave for adding starch to the wort (in imitation of a turbid mash) was that it would extend the life-cycle of the beer: whereas a beer that was mashed high or had maltodextrin in it would be fully fermented after a year or so, in a beer with a starchy wort the slow breakdown of complex starches would result in more residual sugar in a year-old beer, leaving a more balanced flavour profile and creating an extended period of development.  The slower fermentation resulting from the various organisms involved in lambics would also have the same result.

At any rate, I'd certainly like to give spontaneous fermentation another shot, if only so that I can see first hand how such a beer develops over time.

Brew Day: Bug County Solera

As the number of sour beers fermenting in my closet increases, the way I think about individual batches has started to change slightly.  When I first began brewing sours a few years ago I thought of each batch as a separate beer: that was a Flanders Red, that was an Oud Bruin, etc., and when they were done I'd bottle the whole batch like I would any other.  But these days when I brew sours I don't really think of each batch as a beer in its own right.  Instead I've started to see them as possible components in future blends, or as a base for further experimentation.  The beers I'm most excited about at the moment are a Flanders Red-style beer that is aging on cherries and raspberries, and various saisons that are undergoing an extended secondary fermentation after being cut with a small amount of aged sour beer.  My goal in brewing more sours has become having more components around for projects of this sort.

With that in mind, when my bottle of this year's ECY20 arrived I started thinking about the best way to use it.  One vial is more than enough for several batches on the scale I brew at: last year I spread one vial between a number of beers, using some as a sole fermentor, some along with a sacch strain, and even adding some to beers that were already undergoing secondary fermentations.  This year my fermenter space was much more limited---both in terms of the number of fermenters available, and the room I had available for buying new ones---so I knew I would probably be more limited in the number of batches I could brew.  In the end I decided the best thing to do was to use most of it in another solera-style project, so that the diversity that characterizes the blend could be maintained into future batches.

What passes for a solera round here is pretty small fry: I brew two regular three gallon batches and combine them in a six gallon carboy.  The idea is that I can then pull off half of this into a three gallon carboy some time later and replace it with a single three gallon batch.  Later again, when I do the next pull from the six gallon batch, I could either pull from the three gallon carboy into smaller jugs and then top up with the pull from the main solera, or I could just pull into a new three gallon carboy so that I had beer at different ages readily on hand.  I already have a few batches going on this system, and I'll begin pulling from them and topping them up again in the next few months.

With the ECY20 batch I wanted to brew something that I could use for cutting future saisons, where the aged beer could provide microbial diversity and sourness and give me a higher overall yield (since I can just about brew four gallons of saison on my current equipment, then age this with one gallon of older beer in a five gallon carboy).  With that in mind I went for a relatively straightforward grist of 70% base malt and 30% adjunct, but to keep things interesting I varied the malts used in each batch: for the first I did a cereal mash with both spelt and buckwheat, hoping to provide some mouthfeel in the finished beer, and also perhaps some precursors for interesting flavours from the brettanomyces; for the second I went with a more typical blend of wheat and oats.  I'm hoping this beer will get reasonably sour, so to encourage the LAB I mashed on the higher side and kept the hopping rate below 15 IBUs.

The O.G. for both batches was 1.044, and they are currently fermenting separately in two different buckets; in a few weeks, after some of the yeast has dropped out, I'll combine them into the six gallon solera. I'm hoping to be able to take the first pull in around 6-8 months and to use it as part of some blended saisons.  Of course those will also have to age for a few months, so it will likely be almost a year before I get to taste any of this, but I'll at least have an ongoing source for future blends after that.

Tasting Notes: Oud Bruin w/ Wyeast 3209

Here's some tasting notes for the Oud Bruin I made with Wyeast's blend earlier this summer.  The beer was at 1.017 after primary fermentation; I transferred it to secondary after about 2 weeks and added 5lbs of tart cherries.  I then left it for 5-6 more weeks, during which time the gravity continued to drop down to 1.006.  I don't know if that was further activity from the original blend, or if the cherries introduced some wild yeasts.  Either way, its been in the bottle for almost a month with no signs of over-carbonation.

The pH is around 3.7 at 15°C according to my meter; so not blisteringly sour, but certainly tart.  Its probably about right for the style.  The beer is fine but a bit one-dimensional; as you can probably tell from my tasting notes below, I'm not particularly excited about it. I may enter it in some local competitions at the start of next year to get some more objective feedback.

Appearance: Deep brown colour, verging on reddish when held up the light.  Lightly tan-coloured head that dissipates to a small lingering cap.

Smell: Soft cherries and almonds, with a strong lactic note underneath it.  Slight mustiness too---maybe a bit of sulfur?

Taste: Medium tartness hits first, followed by a slightly sweet fruitiness.  Latter is pretty generic, a bit of cherry, maybe some plum.  More pronounced cherry as it gets warmer. Not much in the way of maltiness, and the mid-palate disappears quickly.  Warming alcohol at the end.

Mouthfeel: Slightly thicker mouth-feel than the lactobacillus and brettanomyces beers I brewed earlier this year, which may be in part due to glycerol from the yeast but is also probably a result of the higher ABV.

Drinkability & Notes: This is a perfectly drinkable beer, but otherwise pretty unremarkable.   The cherries don't pop out in the way I'd hoped, and the base beer is nicely tart but a bit one dimensional.    To be honest I'm a bit disappointed that I used 5lbs of cherries on this, its just not a good enough beer.  Maybe the second-extraction beer with added brettanomyces will be more exciting.

Brew Day: Aged Hop Saison

One thing that comes up repeatedly in Yvan de Baets' essay on historical saisons is the affinities these beers had with lambic and gueuze.  Yvan mentions the "wine-like character" of well-made beers, a vinous and sour side accompanied by the distinctive aromas associated with wild yeasts and barrel-aging.  Obviously the mixed fermentation, along with the practice of cutting young beers with sour older beer, go some way towards explaining these connections.  One other thing mentioned in the chapter is the use of aged hops:
"It is likely that when a brewer wished to produce a saison with a predominant sourness, he would use a greater proportion of old hops so as not to contribute too much bitterness and to encourage the development of lactic bacteria.  Farmhouse breweries would most likely have a stock of old or imperfectly stored hops on hand.  The use of older hops was frequent, bringing saisons close to traditional lambic."
I happened to have about 50g of aged pellet hops left over from a failed attempt at making a wort for spontaneous fermentation (more on that in another post), so this weekend I decided to try making a saison along these lines.  The grist was nothing special---my usual mix of about 90% pilsner to 10% wheat----and all of the hops went in at the start of the boil.  I maxed out my kettle/mash-tun again, making over four gallons of wort which will be fermented out in primary by Wyeast 3726.  Rather than going for a mixed primary fermentation, I decided to combine this four gallons of wort with one gallon of the adjunct sour I brewed a few months ago, blending them for an extended secondary fermentation.  The adjunct sour is already down around 1.000, but its still plenty cloudy and already fairly tart, so I'm hoping that it will continue to sour as the starches are decomposed.  I expect the saison portion to finish pretty dry, but this strain often leaves a few gravity points after secondary which the LAB can consume.  I'm not planning on aging it quite as long as I would for a lambic-style beer, but at the moment I'm assuming it will spend at least 6-8 months in secondary.

I'll be curious to see what kind of difference the aged hops make to the flavour profile of the finished beer.  I rather enjoy the mouthfeel and bitterness you get from using large quantities of low alpha hops, but assuming these were aged properly there should be very little bitterness by the time I start drinking this beer.  Some people speculate that the fatty acids provided by aged and oxidized hops provide precursors for ester production by brettanomyces, leading to the aromas characteristic of lambic-style beers.  Perhaps I'll get some of that here as well.  The main thing now is exercising some patience, as I'm running out of carboy space and many of the beers I've brewed over the past few months won't be ready until at least late 2015.

Tasting Notes: Raspberry Berlinerweisse

Last Saturday was Zwanze Day 2014, and after missing it in 2013 this year I finally made it to the celebration at West Lakeview Liquors in Chicago.  I haven't been to many beer events before, and even though I find certain aspects of American beer culture a bit strange and alienating this festival was really fun.  The Cantillon beers were a rare treat (I've never been able to find any on the shelves here), and all very enjoyable.  I also got to try my first beer from Hill Farmstead, Society and Solitude #7---even for someone who doesn't get all that excited about double IPAs, that beer was a real standout.  But one nice thing about being a bit at odds with beer geek culture is that the beers I enjoyed most stayed on tap the longest.  As people went up for the rarer/stronger stuff,  I had glass after glass of Taras Boulba (probably the freshest I've ever had) and this really tasty lager from Amager Bryghus.  I would happily have stayed all day, but we had to leave mid-afternoon to find some food and ended up nipping in to Goose Island Clybourn to see what they had on cask.

Anyway, to mark the occasion, here are some tasting notes for the portion of the no-boil sour that I aged on raspberries (a lambic would have been more appropriate I suppose, but I don't have any bottled homebrew efforts yet).

Raspberry Berlinerweisse
Appearance: Brilliant pink colour---my photo doesn't do it justice.  One of the most striking beers I've brewed.  Billowing head recedes to a thin but persistent cap.

Smell:  Jammy raspberries, but also seeded multi-grain bread.  The seed smell is really distinctive---its almost certainly from the raspberry seeds, but reminds me of a particular bread I used to get from a supermarket back in England.

Taste: Tart up front, followed by more bread and ending with an aftertaste of raspberries,  Very pleasant.

Mouthfeel: Effervescent, prickly carbonation overcomes any thinness in the body.

Drinkability & Notes:  Very happy with how this one turned out.  Its super drinkable and refreshing, nicely tart but with a bit of complexity as well.  J thinks its one of the best beers I've brewed, but really I think a lot of the credit goes to the delicious raspberries I used from Klug Farms.  They tasted so good that I had second thoughts about putting them in a beer, but I'm glad I stuck with my original plan.  Between this and my blackcurrant berliner, berries seem to be a good complement for this kind of sour beer.

Brew Day: Sour Red Ale (plus Yeast Choice for Sour Beers)

As I've mentioned here before, I'm pretty interested in the links between the brewing traditions of Belgium and England, and in particular the effects that brettanomyces and LAB might have had on historical English stock ales.  I'm planning a couple more semi-historical brews in the next few months, but today I thought it would be interesting to try something completely different.  Rather than base my beer on a historical recipe, I came up with a pretty standard home brew recipe for a Flanders Red, and then substituted British ingredients for the Belgian ones.  The result looks nothing like any of the historical recipes for English stock ales I've seen on Ron Pattinson's blog or in his book (my main sources for this kind of thing).  There's too much crystal malt, no brewing sugar, and the hopping is pitifully low compared to the massive quantities in these old recipes.  It makes me wonder about how recipes for Flanders beers have changed over the past few centuries.  For instance, did they also previously rely on brewing sugars and smallish quantities of roasted malt for colour?  Presumably, if sourness was a goal, they might not have been hopped so aggressively---but then again, the hopping rates in lambics are on a par with these English stock ales, though typically with aged rather than fresh hops. Are recipes for porters and stock ales from the 1860s a good guide to the beers Eugene Rodenbach brewed when he returned to Belgium after working in England?  Was there a tradition of red and brown sour ales in the region before then?    I still don't know very much about the historical connections between the traditions behind these beers, but I'm sure some of this information is out there to find.

Anyway, I figured this recipe would produce a nice sour red ale, and I'm looking forward to the results, though I don't have any clear idea of how it might differ from a standard Flanders Red.  The general consensus seems to be that there is plenty of variation between malts from different countries---not just in the obvious cases (i.e. compare pilsner to Maris Otter), but also between things like crystal malts rated at the same colour level.  Perhaps this will result in subtle (or not so subtle!) differences in the final beer; or perhaps the sourness and funk will cover all of this up.  I don't have enough experience with different maltsters to hazard a guess here. I'm planning to use Wyeast 1318 for primary fermentation (much more on that below!), and then to use a small amount of a year old Flanders Red (perhaps along with some of its yeast cake) to inoculate the new beer as I rack the old one onto a blend of sour cherries and raspberries.

One thing I was thinking about while formulating this recipe was the difference that using an English yeast might make to the final beer---and on thinking this through, I came to the conclusion that I should be using English strains much more frequently when brewing sours.  I thought I'd indulge myself and type up these ramblings.  For those interested, the recipe for this beer is at the end of the post.

Yeast Choice and Sour Beer

I started with the thought there are two or three key things to think about when it comes to saccharomyces strains for sour beers:
  1. The amount of fermentable sugars they will leave for the lactic-acid producing bacteria.
  2. The precursors for brettanomyces-produced compounds they will leave in the fermented beer.
  3. The flavour contribution the strain will make to the final beer (assuming the flavours it produces survive the activity of the brettanomyces and bugs).
The significance of (1) is pretty obvious: if you want a sour beer, you need to make sure that the lactic-acid producing bacteria have enough fermentables to produce acid-levels to your taste.  One way of making sure there is plenty of sugars for the bugs is to use a strain of saccharomyces with a low attenuation rate for primary fermentation.  English yeast strains are obvious candidates here, since with the right handling they will finish with relatively high final gravities.  Of course, there are plenty of other ways to achieve the same result with more attenuative strains---mashing high, under-pitching, adding starches.  So (1) is inconclusive, but certainly doesn't speak against using an English strain.

With (2), however, things get more interesting.  Thanks to research by people like Chad Yakobson, home brewers are beginning to grip on the ways in which by-products of primary fermentation act as precursors for different flavours created by the ongoing activity of brettanomyces.  This set of slides from a talk by Chad Yakobson provides a good summary of some of his research; there's also information on this in Wild Brews and American Sour Beers; and there's more information in this thread on HBT.  

For now, the following will do as a rough and ready summary (based on my limited understanding of the science).  Phenols from the brettanomyces tend to yield the funkier flavours: barnyard, band-aid, medicinal, smoke.  Esters produced by brettanomyces tend to yield fruitier flavours: pineapple is a commonly-mentioned example.

With this knowledge, a brewer who wanted to produce a funky beer might try to increase the precursors for phenol production available to the brettanomyces.  There are various ways to do this (again, see Chad's slides), but the most relevant is by using a POF+ yeast, since these produce the 4-vinyl compounds that brettanomyces can convert into the relevant phenols.  The commonly used example of a POF+ yeast is hefeweizen strains, which produce distinctive clove phenolics---but many other commonly used Belgian strains such as Wyeast 3522 (Ardennes) and 3787 (Trappist High Gravity) are also counted as POF+ (according to a presentation I listened to by Stan Hieronymus from the 2014 AHA conference),  

So, using a POF+ Belgian strain will encourage the production of phenols by brettanomyces, increasing the levels of funkier flavours and aromas in the final beer.  What's more, since phenols seem to have an additive or synergistic effect, the phenolic character of Belgian yeast might also add to the overall perception of phenol-related flavours and aromas.

On the other hand, a brewer who wanted to minimize funky flavours might try to minimize these precursors, and an obvious way to do this is to use a less phenolic yeast strains: lager strains (used by New Belgium), the Chico strain (recommended by Jamil Zainasheff)....or an English strain.  

What about the other side: the fruitier flavours associated with esters?  Based on what I've been able to find out so far, the precursors for these are organic acids which come from a variety of sources, including the activity of enterobacter in spontaneously inoculated wort, dying yeast cells, and fatty acids in aged hops (all relevant to lambic production).  I haven't been able to find any evidence that esters themselves might provide the relevant compounds in a manner usable by brettanomyces, so that an ester-producing English strain might also be a source of precursors that result in some unique brett-derived esters.  The plausibility of this thought might be obvious to someone who actually understands the science behind all of this, but I do not.  What does seem to be true is that esters also have an additive or synergistic effect, so that at the very least, the combined ester production of the saccharomyces and brettanomyces might increase the overall perception of fruity flavours in the final beer.

Of course, this could easily back fire on you.  Just as too many phenols can make a beer taste like band-aids or medicine, too many esters could leave you with a beer that tastes like nail-polish remover or solvents.  Eugh.  So in both cases, a balance is required, especially if you're adding brettanomyces.

How to put this information to use in chosing a yeast strain?  Well, it depends what kind of beer you want to brew.  There are plenty of threads on HBT where people ask how to brew the funkiest beer possible.  A good answer would be: use a POF+ yeast, and take other steps to encourage the production of phenols. But when I envisage the kind of sour beer I'd like to brew, I think of something characterised by soft fruitiness with a low-level but definite funk in the background.  English yeast strains might be a great candidate for producing something along these lines.  Even if they don't lead to new esters from the activity of the brettanomyces, they might still produce the right levels of fruitiness and funk after secondary fermentation.

What about (3), the contribution the saccharomyces makes to the flavour profile of the final beer?  Since brettanomyces has a tendency to mix up all the flavours produced by primary fermentation, its hard to predict how much of this will survive.  But when I was formulating this recipe, I had in mind the gentle and balanced fruitiness that is produced by something like Wyeast 1318 (London Ale III).  This is one of my favourite strains, and besides its soft profile it also has the interesting quality of leaving a slight perceived sweetness in the finished beer that seems to be independent of the final gravity (i.e. if you compare it to other strains fermenting identical wort to the same F.G., it will still seem sweeter---but the sweetness isn't the cloying kind that comes from unfermented sugars).  If any of that flavour profile survived into the finished beer, it could make for a phenomenal Flanders Red!  

Of course, if the brettanomyces accentuated the estery flavours of a strain, or even produced new flavours along the same lines, even more possibilities would present themselves.  Imagine the stone fruit esters produced by something like Wyeast 1469 (and other strains of English origin) dialed up against a background of sourness and light funk. I think that could work really well.  (On the other hand, if it dialed up the banana flavours that Wyeast 1469 sometimes spits out, it could be pretty gross...)

Well, enough of my ramblings.  This is all a roundabout way of saying that I'm going to start using English strains in any sour beer that is not a saison or berlinerweisse or the like from now on!

Process: Adjuncts, Starches, and Sour Beers

The second beer I brewed over the Labour Day weekend was a pale sour inspired loosely by the practices of Belgian lambic makers.  I say loosely because I did not perform a turbid mash, and I pitched a vial of ECY01 rather than allowing the wort to be inoculated by ambient microbes.  But I did try to produce a starchy wort by other means, and its that process that I want to describe in this post.

The basic idea is to add some starch to the wort at some point after the enzymes from the mash have been denatured, so that this starch is not broken down and makes its way into the fermenting beer; while the Saccharomyces will be unable to ferment it, the Brettanomyces and other bacteria are capable of breaking the starch down into sugars and eventually fermenting it out.  

I first got the idea to do this from an interview with Dave Marliave of Flat Tail Brewing on this episode of the Sunday Session .  In the interview, Marliave describes adding flaked oats to wort post-boil to mimic the starchy wort produced by the turbid mash that lambic brewers use. He states that these starches take much longer to breakdown and ferment out than other complex sugars, so that the overall effect is to prolong the lifecycle of the beer.  It might mean, for instance, that a sour brewed in this way still had some residual sweetness and body a year or two into fermentation, and might continue to develop over a longer period.  So the idea here is not just to provide food for the bacteria so that they produce enough acid (this might also be achieved by mashing high or adding maltodextrin); its to extend the life of the beer, and change the way its flavour profile develops over time.


The method I use is a variation of the one that Marliave describes.  After I've raised my mash to mash-out temperatures and removed the bag with the grist, I add another small mesh bag filled with between 100-200g of flaked oats.  I steep these in the wort for five to ten minutes while I bring it up to a boil, then remove them and give the bag a quick squeeze.  The result is a very cloudy and turbid wort, as you can see from the photo at the start of the post.

When I first heard the interview, I started this thread on HBT to see if other people had used the technique.  If you browse through it, you can find links to other people trying the same kind of thing: some use flaked oats, others add flour to the boil.  This episode of Basic Brewing Radio includes an interviewer with a home brewer who adds pasta to her secondary fermenters with the same goal in mind.

This is the second time I've used the process.  The first beer I brewed is around nine months old at this point, and I took a quick sample this week before writing this post.  So far, the results are promising, and in line with what Marliave describes.  The beer is still a bit turbid, but has cleared considerably over the course of the year.  I have no way of knowing how much of this is breakdown of starches and how much precipitation of proteins etc.  The aroma was mainly lemons and light funk, and the beer tasted lightly sour with some noticeable residual sweetness and body.  At this point it is not a particularly exciting beer, but at nine months old its still relatively young, and I plan on leaving it for at least another six to eight months before I even think about bottling it.

The two batches I brewed this weekend were based on a fairly straight-forward lambic style wort: 60% pilsner and 40% malted wheat.  A few months ago I went through my freezer and took out a bunch of hops from the 2011 harvest and earlier and put them in a brown paper bag in my brew closet to speed up their ageing.  They could probably used a few more months, but I decided to use 30-40g per batch anyway.  Since I was not relying on inoculation from ambient microbes, I didn't need the bacteriostatic properties of the hops to check unwanted bacteria.  But there's some evidence that fatty acids and other products of oxidation in aged hops can be converted by brettanomyces into the ester compounds characteristic of aged sour beers (see p.42 of American Sour Beers for brief discussion of this research), and that seems like reason enough to try using them.

Once primary fermentation is over, I plan to combine 5 gallons in a Better Bottle, which I may end up treating as another solera.  The remaining gallon or so will be aged in jugs, but I plan on blending it with another saison in a few months and then letting this mature for a year or so.

In Perpetuum: Flanders Red

For me, the end of summer is the best time to brew sour beers that will undergo an extended secondary fermentation.  It allows them to mature at cooler temperatures for most of the year before the hot and humid summer begins again.  Thankfully this summer hasn't been too hot, and judging by how they tasted when I sampled them recently, the sour beers that will be reaching the one year mark in the next few months have all managed to stay free of acetic acid and other strange flavours.

This year, instead of brewing a number of sours over a couple of months, I decided to use the Labour Day weekend to brew two double batches (i.e. 6 gallons total each) of a pale and a dark sour beer. As I've mentioned here before, while I'm generally happy doing smaller batches, three gallons of sour beer can seem like a disappointingly small pay off after waiting over a year for a beer to finish, and it leaves little scope for more interesting projects like making blended sours or using them to cut other beers.  Over the past few months I've been taking steps to increase the volume and age range of sour beers I have on hand, and doing double batches like this is a part of this process.

The dark beer I brewed was a Flanders Red, based on Jamil Zainasheff's recipe from Brewing Classic Styles.  This is the third time I've brewed this beer.  My first attempt would be two years old at this point, and might be the beer described in this post (details about why I don't know for sure are in the post!); my second is reaching the one year mark, and will be racked onto a blend of sour cherries and raspberries some time in the next month or two.  Both of those beers were fermented with Wyeast Roeselare and assorted dregs, and I was happy with the results---neither is blisteringly sour, but that suits my palate just fine.  This time I decided to try something different, so I picked up a vial of ECY02 (incidentally, its nice to see these staying available for more than a few hours at a time again---I'm sure its partly because Al is increasing production, but I can't help but think that the arrival of new companies like The Yeast Bay is also helping things here).

When the two batches have finished primary fermentation, I'll combine them into a single six gallon Better Bottle, as I did with this other pale sour.  If everything goes according to plan, I'm going to treat this as a solera as well, racking off three gallons into a smaller Better Bottle in 8-10 months and topping up with freshly fermented wort.  Hopefully I should be able to keep this going indefinitely, so that eventually I'll always have both pale and dark sours of different ages on hand.

My inspiration here is the process used at New Belgium, as described in Chapter 5 of American Sour Beers.  New Belgium brew two sour beers, nicknamed Felix and Oscar, the first pale and the second dark; these are aged in large oak foeders, and provide the base for all the sour beers that the brewery releases.  While they aren't exactly treating the foeders as a solera system, they do often leave 10-20% of a foeder full with old beer when adding fresh beer to ensure that each batch gets a good blend of bugs and bacteria.  One thing I found interesting in the chapter was the fact that they often leave larger proportions of soured beer, and have found that this decreases the time before the beer is ready for packaging.  I'll be interested to see whether brewing in a solera system at home changes the speed with which these beers mature: it would be great if, as well as increasing volume, this method also sped up production of aged sour beer.

Tasting Notes: Biere de Coupage (Pale Saison)

Here's some tasting notes for one of the beers I'm most excited about at the moment: a young and hoppy saison blended with a small portion of aged sour beer.  You can read some longer posts about the historical background to this process here and here, with more post about other beers I've made this way here.  I gave a bottle of this to Michael Thorpe of Spontaneous Funk, and I've included his tasting notes at the end of the post.  (For other posts on this technique, see the links here.)

Appearance: Pale golden colour.  The head dissipates quickly and almost completely, leaving minimal lacing.

Smell: Predominantly the juicy stone fruit / canned pineapple juice I usually get from my house culture.  Light blackcurrant and floral notes, and a gentle earthy funk in the background.

Taste: Stone fruits, citrus rind, soft but definite acidity (the beer is more sour than tart), slight metallic bitterness, but not at all unpleasant.  Really quite lovely actually.

Mouthfeel: Prickly carbonation.  Could be a touch higher perhaps, though for me its fine where it is.  Beer finishes dry but is not at all thin, probably thanks to the glycerol from the WY3711

Drinkability & Notes: I'm pretty delighted with this beer.  It doesn't have the complexity of an aged sour, but its very drinkable, and I think the light but still mouth-watering acidity takes it a cut above my other saisons.  I'm suprised by just how much of a difference such a small proportion (~15%) of aged sour made to the final beer.  Needless to say, I'll be using this technique again.

I'll be interested to see how the beer ages.  I bought another bottle of BFM √225 Saison to compare it with, and where I'd loved that beer before I now found it a bit disappointing.  I think the hops had become slightly oxidized, detracting from the bright and juicy character I'd enjoyed in younger bottles.  Perhaps with a bit more time the brettanomyces profile would come to dominate and take the beer in a different direction (this would fit with what Garrett Crowell told me about Jester King beers in his email).

Michael's Notes: Starts with a nice and fairly subtle petit saison base, transitioning into a bit of acidity and light fruitiness. A bit of the leafy/earthy character that I always associate with 3711, though in a good way, and not overpowering like it often becomes with 6+% saisons done with it. Nice spritzy carbonation; very light. Quite easy drinking, and definitely a nice warm weather beer. Would certainly order another pint!

Brew Day: Stingo

I continue to be fascinated by the role wild yeasts and other bacteria would have played in older English beers, and the ways in which British brewing traditions might have overlapped with those surviving on the continent.  The July/August issue of Zymurgy had a short article on a beer called "Stingo", which it described as an English strong ale associated with Yorkshire.  Since I was reading everything I could find about these aged stock ales, I decided to do a little bit of internet research about "Stingo", and marked the recipe down as one I might try this summer.

Digging around online I discovered that Pretty Things and Boulevard had joined up to brew a beer inspired by Yorkshire Stingo.  In interviews connected with the collaboration, Dan and Martha from Pretty Things engage in some intriguing speculation about the connections between British stock ales and the acid ales of the Flanders region:
“In the mid-1800s Eugene Rodenbach, who was maybe the third generation of the brewery was sent to do an internship in the north of England and when he came back to the brewery he brought with him the beer we know today, this blended, aged, brown, malty beer. So obviously Rodenbach in almost no way resembles anything that’s presently brewed in the north of England.” 
“But it did back then,” Martha continued. “So the roots were borrowed from Yorkshire. Which really isn’t what people want to think so nobody really talks about it. But it’s true.”
There is more in this vein in the write up accompanying the beer posted by brewer Dan Paquette on the brewery's blog:
"Is Stingo the original Flanders Red? I’ve been all around the Rodenbach brewery and I’ve seen photos of plenty of wooden fermenters in old English breweries. There are a lot of similarities between breweries in this period anyway. De Dolle Brouwerij in Esen, Belgium is like a close cousin to the T & R Theakston brewery in Masham, Yorkshire. Green King still uses “rounds”, wooden vessels similar to the classic Belgian “foeder” to make its Olde Suffolk ale. I don’t claim to be making an academic study, just observations. But I’d love for someone to look into it further."
I remembered that the name "Stingo" showed up in the "Barley Wine and Old Ale" chapter of Amber, Gold, and Black, but on rereading the chapter I could find no particular mention of any acidity:
"Other regional varieties of strong ale included Yorkshire Stingo, which Alfred Barnard in 1890 found being brewed by John Metcalfe & Son at the Nidderdale brewery in Pately Bridge, and Joshua Tetley in Leeds, where he found it `very luscious, full of body and well flavoured without being heady'."
Later in the chapter there is this:
"Hammonds also brewed a stronger XXXXX Stingo, using 82 per cent pale malt and 18 per cent glucose, with the wort boiled for three hours to concentrate it and give it more colour, an OF of around 1100 and an abv of 9.5.  The quite high final gravity of 1027, suggesting a sweet beer, would have been balanced by the massive amount of hops used, which may have given a bitterness level as high as 119.  This, Dr Thomas suggests, was a classic barley wine, with an aftertaste that was likely to be richly hoppy and bitter, and an ester and alcoholic  background from the high gravity fermentation.  As he says: 'One can only speculate on its complexity'." 
I suspect the idea that a beer called "Stingo" was the missing link between Flanders and English ales is probably wishful thinking. But regardless of any such particular link, there are definite ties between the two traditions.  Here is what Jeff Sparrow has to say in Wild Brews on the related topic of blending old and young beers:
"It is difficult to determine exactly on which side of the English Channel this tradition began.  The people at the classic West Flanders brewery Rodenbach cite the similarity with the practice of blending in the United Kingdom, and ancestor Eugene Rodenbach was known to have studied brewing in England.  Some people credit Rodenbach with bringing the method of tall wooden cask construction and accompanying fermentation process to Belgium around 1860. Says Michael Jackson, "Some people believe that Rodenbach's techniques of aging and blending were taken from the porter and stout brewers of England and Ireland.  I think it was initially the Flemish who taught the islanders about such matters, although knowledge did begin to flow the other way after the Industrial Revolution." Wherever the tradition began, the English and Flemish traditions are inexorably linked."
What is clear is that English stock ales were often prized for their tart, vinous character, something they share to some extent with Flanders beers, and something that was almost certainly the product of a secondary fermentation by brettanomyces and other organisms.  You can read some interesting speculation about exactly how tart the beers were in the comments from this post at Shut Up About Berkeley Perkins.  Reading through some of the historical material that Ron and others have posted you find plenty of references to acidity and "hardness" being undesirable, so perhaps these weren't beers that were soured to the same extent as modern Flanders reds etc.  Then again, with no way of trying the beers in question, its difficult to know exactly how these brewers applied such terms.  Perhaps what they sought to avoid was the vinegary acidity that is produced by acetobacter, rather than the softer acidity from lactic fermentation?

Sadly there aren't many surviving British beers in this tradition. Samuel Smiths still makes a Yorkshire Stingo, but as far as I know it does not undergo secondary brettanomyces fermentation.  The closest thing I know is Gale's Prize Old Ale.  When it was brewed by Gale's of Horndean, it underwent secondary fermentation in wooden hogsheads inhabited by various wild yeasts and lactic acid producing bacteria.  After Fuller's took over the beer, they preserved its resident microflora by brewing in a solera-style system, preserving a portion of each batch to inoculate future ones (kind of like I've been doing with my beers).  (Another example is Greene King Old XXXXX, which makes up a portion of their Olde Suffolk Ale.)

The Zymurgy recipe makes no claims to historical accuracy, but I decided to follow it anyway.  Besides the anachronous use of crystal and huskless black malt, the hopping rates seem very low compared to the recipes for keeping beers that you can find on Ron's website.  Still, it looked like it would make a good beer, so last weekend I went ahead and brewed something based on it.

I made a couple of changes to the recipe written in the magazine.  The first was to replace their single base malt (Maris Otter) with a blend of the malts I have on hand: I went with Mild malt, Pearl, and US 2-row.  The Zymurgy recipe called for adding a finely ground huskless black malt just before mash-out to darken the colour without adding too much roast; since I didn't have any on hand, I cold-steeped some roasted barley overnight, and added the resulting liquid for the last ten minutes of the boil.  The recipe also calls for a dark invert sugar.  Since it takes a while to make this from scratch on the stove, I tried the method of blending a white invert with dark blackstrap molasses (described here).  It gave a nice licorice characters to the final sugar, and was much easier than trying to hold the sugar at the right temperature for a few hours to darken it.  I think I'll be using this method from now on.

Brew day went fairly smoothly.  I've noticed that my efficiency takes a real dip when I go above 1.060, and even after lowering predicted efficiency a bit in BeerSmith for this recipe I still came ten points short, ending with a beer at 1.080 rather than 1.090.  I pitched a large amount of Wyeast 1469 cropped from the two beers I brewed last weekend, and set my fermentation chamber in the low 60s.  The recipe calls for starting higher to encourage ester formation, but I stuck with my usual practice, which involves gradually ramping up the temperature over the next week.  I haven't decided exactly how I'm going to inoculate this beer yet.  It will certainly get a pitch of White Labs Brettanomyces Clausenii, as will the Keeping Porter I brewed last week.  I also reserved some of the Oud Bruin I brewed recently, which has lactobacillus brevis in it, and I'm thinking about adding this to both beers.  With the alcohol levels and hopping rates as high as they are, I'd be suprised if the lactobacillus manages to make any real contribution, but I figured I might as well try.  The real question is whether to add cultures that I know contain pediococcus, or whether to stick with brettanomyces and lactobacillus.  The latter will certainly result in a less sour beer, which in this case may be what I want.
